You may already be accustomed to drinking sake warm in small porcelain cups (Sakazuki). Serving sake this customary way can add a special, traditional atmosphere to your enjoyment. To serve warm, pour sake into a small open-mouthed carafe (Tokkuri). Next, place the carafe in hot water for a few minutes. The ideal temperature is slightly above body temperature, or approximately 100 - 105 degrees F. Alternatively, you may place the carafe in a microwave oven for about 30 seconds. (Time various according to microwave capacity). Never boil sake. This destroys its aroma and flavor. Many sakes may be served at room temperature.

Chilled sake pairs perfectly with herb crusted red snapper.

Chilled sake is becoming increasingly popular as a versatile drink before, during and after meals. While full-bodied sake is at its best served warm, sake with more delicate and complex flavors should be served chilled or at room temperature to preserve its fine character.

SAKE MARGARITA 4 parts Sho Chiku Bai sake, 1 part Cointreau or Triple Sec, 3 parts lime juice. Mix in blender with ice and seve in salt-rimmed glass. Garnish with lime wedge.

SAMURAI ROCKS 3 parts Sho Chiku Bai sake and 1 part lime juice on the rocks; serve with a slice of lime.

PLUM SPRITZER 1 part Plum Wine, 1 part soda, garnish with lemon twist. Serve in tall glass with crushed ice.
